With that said, glacial gold deposits are still present here just as in all of the other states in the Northeast, so there is definitely some gold to be found. Yeah but casterly rock in the show is just a regular ass castle. They couldn't really do the version from the books, kinda like the iron throne itself. The castle that the unsullied take from Jaime and Bronn in season 6 is the canonical casterly rock, and there's no way in 7 hells that thing is taller than the wall.
In the Westerlands: Casterly Rock has a unique modifier. The Golden Tooth, Castle Pendric, and Nunn's Deep all have mining settlement modifiers which give lots of gold.
